- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lime
-
For the Slaw:
- 2 cups thinly sliced cabbage
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 2 tablespoons mayonnaise
- 2 tablespoons plain Greek yogurt
- 1 tablespoon lime juice
- Salt and pepper to taste
- For Assembly:
- 8 small tortillas (corn or flour)
- Sliced avocado
- Salsa or hot sauce (optional)
- Lime wedges for garnish
Instructions
- For Barramundi Tacos, start by preparing the barramundi. In a small bowl, mix the olive oil, chili powder, cumin, salt, pepper, and lime juice to create a marinade.
- Brush the marinade over the barramundi fillets and let them sit for about 15 minutes to absorb the flavors.
- While the barramundi is marinating, you can prepare the slaw. In a large bowl, combine the thinly sliced cabbage, diced red onion, and chopped cilantro.
- In a separate small bowl, mix together the mayonnaise, Greek yogurt, lime juice, salt, and pepper. Pour this dressing over the cabbage mixture and toss to coat the slaw evenly. Set it aside.
- Heat a grill pan or skillet over medium-high heat. Once hot, add the barramundi fillets and cook for about 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
- While the barramundi is cooking, warm the tortillas in a dry skillet or microwave them for a few seconds.
- Once the barramundi is cooked, remove it from the pan and flake it into smaller pieces.
- To assemble the tacos, place some of the barramundi pieces on each tortilla, add a generous spoonful of the slaw, and top with sliced avocado.
- You can also add a drizzle of salsa or hot sauce for some extra flavor if you like.
- Serve the barramundi tacos with lime wedges on the side for squeezing over the top, and enjoy your delicious meal!
